Since 2016 they have grown tea plants to produce black Windy Hollow Tea. Windy Hollow farm also produces herbs such as camomile, nettle and meadowsweet.
Monica, from the farm, is working in conjunction with the Soil Association towards gaining an Organic Certificate. She uses no pesticides or other chemicals in growing and drying her plants.
Last week we met Monica on the farm and gained an insight into her work, tea planting in Scotland and wild life conservation on farm land. It was a special experience to enter this natural environment. A frog jumped across our path and butterflies flew around in the sun. Monica also showed us a tea ceremony which she studied with her tea master from Taiwan.
